Meet Chef Chris Brown of Legends on Niagara

Everyone knows that the best parties always end in the kitchen. With our series Kitchen Party, we’re sitting down with Feast On Chefs to get to know them, and the local foods that inspire them, a little better.

What’s your favourite seasonal ingredient?

My favourite ingredient is Lake Erie perch. It is very fresh and great on almost everything!

What’s your drink of choice?

My drink of choice is a glass of Ontario chardonnay — also Ontario craft beer, like the Beer Devil IPA [by the Niagara Brewing Company].

Most underrated ingredient?

I think the most underrated are fresh herbs. It has become so easy to buy dried herbs that we forget how much better fresh herbs taste.

Off-duty, what are you most likely to be cooking at home?

Homemade burgers or fresh fish and chips are staples when I cook at home!

What’s the best part of working with Ontario food and drink?

We can follow each product from the seed and know that it has not travelled across the ocean. The freshness is exceptional.

Fill in the blank: “If I entered a competitive eating contest, I’d definitely win if the item was ____”

Fresh Lake Erie perch…it’s like candy for me!
