Grey & Gold Cider
Located in the heart of Beaver Valley apple country, this sustainable, farm-based cidery produces award-winning, small-batch, dry artisanal ciders. Visitors can sample and purchase their full range of ciders at the orchard-side bottle shop, as well as find them at select bars, restaurants, and independent bottle shops across Ontario.
The cidery embraces a minimal-intervention philosophy, guiding and facilitating the natural fermentation process rather than controlling it. Each cider begins with locally grown Grey County heritage apples, which are pressed on-site and fermented slowly at cool temperatures over several months. This extended fermentation period allows the cider to develop a richer varietal character and greater complexity. Rather than relying on sulphites or commercial yeasts, the cidery opts for a spontaneous, wild fermentation using native yeasts.
In the spring of 2020, a six-acre organic cider orchard was planted with 1,700 trees spanning 29 varieties of cider-specific and multi-purpose heritage apples. Any additions to the cider—whether sumac, wildflowers, or the signature spruce tips featured in the award-winning Spruce of the Bruce—are entirely natural and locally sourced, often foraged from the surrounding fields and hedgerows of the farm.
From orchard to bottle, every sip reflects the land, the season, and the hands that craft it.
